
Hi! My name is Nicole.
I began baking as kid, learning from my gran and her little Be-Ro book! Growing up I absolutely loved cooking, often planning a week of meals for us all and then making them too. I studied Food Tech at GCSE level and then went onto do a catering course at college, falling in love with the patisserie side of things! I always wanted a little dessert cafe, serving hot drinks and sweet treats but life had other plans and I ended up leaving the food industry completely for a long time.
The idea for Phat & Sassy came in late October 2024, after a very enthusiastic conversation with my husband about one day owning a Brownie van and travelling around to different festivals – having never baked a single brownie in my life. The conversation actually started off being about how we could buy the pub down the road from us that had just gone up for sale haha!!
I decided to go for it and figured that baking from our home kitchen, selling postal treats and at markets would be a good start!
My first time baking for the public was in November ’24. I started strong with a super busy 3 day Christmas market, and I basically just completely winged it! I managed to all but sell out on the second 2 days – Almost 400 products sold in a weekend! After that I got the bug and booked onto several more last minute Christmas markets. The weather wasn’t kind to us and all but one of those markets fell on a weekend with weather warnings. Regardless, I still managed to sell out at almost all of them!
Going from only baking for family and friends, to baking 100’s of things for a weekend was a massive adjustment, but I loved it!
In early 2025 I started trading occasionally at a local Farmer’s market as well as continuing with postal treats, trading on the market more regularly in the early summer months. Whilst I thoroughly enjoyed the baking, I unfortunately had to stop as my carpal tunnel was getting worse each weekend that passed.
During my time baking and selling my treats, so many people asked if I would be willing to sell my recipes. Sorry, but I’m not. I’m going to give them to you for free!!
